The signature dish of Santorni, a bowl of fava (a humble, hummus-style blend of yellow lentils, olive oil, vinegar, garlic, and oregano topped with a scattering of capers), may be less conventionally beautiful than the white-washed architecture, the azure shoreline, and other symbols of the island–but it’s no less delightful to the senses. Fava is a staple on menus from Imerovigli to Akrotiri, but the versions at Roka in Oia and Assyrtico in Fira are among our favorites.

Go Wild
Attention, hungry hikers: consider foraging for picnic fixings while you’re scampering up the caldera, because some of Santorini’s most prized culinary staples–like capers, figs, and the bitter greens collectively called horta–are abundant in the wild. Of course, a fruitful day of foraging deserves a reward. For that, try SAVEUR’s recipe for Horta me Avga Tiganita  — an irresistible and quintessentially Greek pile of tender sautéed greens and rich fried eggs.
