The signature dish of Santorni, a bowl of fava (a humble, hummus-style blend of yellow lentils, olive oil, vinegar, garlic, and oregano topped with a scattering of capers), may be less conventionally beautiful than the white-washed architecture, the azure shoreline, and other symbols of the island–but it’s no less delightful to the senses. Fava is a staple on menus from Imerovigli to Akrotiri, but the versions at Roka in Oia and Assyrtico in Fira are among our favorites.
